It's strawberry season! We needed a recipe that could take advantage of this glorious season. Behold muffin cookies, which are basically like a muffin top. You know .... the best part of the muffin. But "muffin cookie" is an awkward name. Maybe these should be called mookies? What about cooffins? Or cuffins? On second thought, we will be sticking with muffin cookies.
Moving onto the best part, the crumble. The crumble packs a little heat since it has Burns and McCoy Exitium. As with many of our recipes, the heat level is warm more than hot. Add a quarter teaspoon of hot sauce at a time to kick it up.
Serving: 16 cookies (or more depending on how big you want them.
Prep Time: 10 minutes
Cook Time: 18 to 20 minutes
Ingredients
Spicy Crumble
3/4 c flour
2/3 c sugar
6 tbsp salted butter, chilled and cubed
1/2 tsp Burns and McCoy Exitium
Muffin Cookies
1/2 c salted butter, softened
3/4 c brown sugar
1/4 c sugar
1 egg
1/2 c Greek yogurt
1/4 c milk
2 tsp vanilla
2 c flour
1 tsp baking powder
1/4 tsp baking soda
1 1/2 c strawberries, chopped
Directions
1. Preheat oven to 350F. Prep baking sheets with parchment paper or silicone sheets.
2. Combine sugar and flour in a bowl. Cut in butter and hot sauce until crumbly. Set aside.
3. In another bowl, combine flour, baking powder, and baking soda.
4. In a larger bowl, beat butter, brown sugar, and sugar for about 2 minutes until light and fluffy. Add in egg and mix until combined. Add yogurt, milk, and vanilla and beat until combined. Scrape the sides of the bowl as needed.
5. Gradually add dry mixture to wet mixture until a dough forms. Stir in chopped strawberries until distributed.
6. Drop scoops of dough (1/4 c worth or less) onto prepared baking sheets. Sprinkle cookies with crumble topping.\
7. Bake at 350F for 18 to 20 minutes, though bigger cookies may need to bake longer. Edges will be golden brown when the cookies are done.
