Without further ado, we bring you this week's #YearofYum recipe ... churro bites with spicy chocolate sauce. The chocolate includes the tiniest amount of Exhorresco. Combined with cinnamon and orange zest, the sauce pairs so well with the churro bites. Onto the bites. Because they are baked not fried, they have a heavier, more satisfying texture without all the hassle of traditional churros. The bites as basically mini muffins dipped in melted butter and coated with cinnamon and sugar. You know, all the good stuff life has to offer. Give us a shout and let us know what you think.

Ingredients
Churro Bites
3 c flour
2 tsp baking powder
1/2 tsp salt
1 c sugar, divided in half
1/2 c brown sugar
12 tbsp melted butter, divided (8 tbsp and 4 tbsp)
2 tbsp, plus 1 tsp cinnamon
2 eggs, lightly beaten
1 c milk
Chocolate Sauce
1 c heavy cream
1 c semi sweet chocolate chips
Zest of a navel orange
1/2 tsp Burns and McCoy Exhoressco
1/2 tsp cinnamon
1/4 tsp vanilla
Directions
Churro Bites
1. Preheat oven to 350 F. Prep a 24-cup mini muffin tin with cooking spray.
2. In a large bowl, whisk together flour, baking powder, and salt. Add brown sugar, 1/2 c sugar and 1 tsp of cinnamon. Whisk to combine.
3. Add egg, milk, and 8 tbsp butter. Stir until the mixture is combined though it won't be completely smooth.
4. Spoon 1 tbsp of batter into prepped muffin tin. Bake until a toothpick inserted into the center of the muffin comes about clean, about 18 minutes. Let muffins cool slightly in pan for about 5 minutes then remove from the pan.
5. Mix the remaining 1/2 cup sugar and 2 tablespoons of cinnamon in a shallow bowl. Dunk each muffin in the remaining 4 tbsp of melted butter before tossing in cinnamon-sugar mixture. If the bites start looking darker, add more sugar to the mixture.
Chocolate Sauce
1. Combine all ingredients (cream, chocolate, zest, hot sauce, cinnamon, and vanilla) in sauce pan. Heat over low heat, stirring occasionally until combined. Be careful not to overwork the chocolate or use a double boiler if you have one.
