Year of Yum has a little bit for everyone. We are following last week's wings with a great dish for vegetarians. However, these tacos are a crowd pleaser regardless of food preferences. The avocado cream sauce is the star of this dish. Really these tacos are just a way to eat loads of the cream sauce without any guilt. If you can't get past sweet potatoes in your tacos, use your favorite meat. Shredded pork or beef would be a fantastic addition. And for those looking to add more protein to the dish, consider adding black beans.
Start by cutting up the sweet potatoes and putting them in the oven. Then prep the pickled onions. The onions will only get better with time, but can be ready in as short as one hour. Prep the avocado cream sauce last.
Servings: 20 tacos (10 servings)
Prep Time: 50 minutes (can be done while the sweet potatoes bake)
Cook Time: 60 minutes
Sweet Potatoes
2 large sweet potatoes
2 tbsp olive oil
1 tsp chili powder
1 tsp salt
pepper to taste
Set oven to 375F. Cut sweet potatoes into cubes. Place them on a sheet pan, and drizzle with olive oil. Stir the potatoes to ensure each is coated with oil. Then smooth them out to a single layer. Sprinkle the potatoes with chili powder, salt, and pepper. Bake for 60 minutes.
Pickled Onions
1 medium red onion
5 peppercorns
1 pinch dried thyme
1/2 tsp salt
1/2 tsp sugar
1/4 cup apple cider vinegar
1 cup water
Slice onion into thin rings. Place into jar. Add peppercorns and thyme. In a separate bowl, add the salt, sugar, apple cider vinegar, and water. Whisk to combine. Then pour over the onions. Seal the jar and gently shake to combine. Leave on the counter for about an hour. Then place in the refrigerator. Add a few more peppercorns or a dried chile if you want your onions on the spicier side.
Reaper Verde Avocado Cream Sauce
2 tbsp + 2 tsp Reaper Verde Sauce
1 tbsp water
1 tsp salt
1/2 cup cilantro (tightly packed)
2 cloves of garlic
2 avocados
juice of 1 lime
pepper to taste
Combine all items in a food processor. Blend until smooth. Add more water if you would like the sauce to be less thick.
Assemble the tacos
Layer sweet potatoes, Reaper Verde Avocado Cream Sauce, and pickled onions. Top with pepitas, cilantro, and fresh lime. Radishes and shredded cheese would also be delicious.
